This recipe is for a 6qt Instant Pot. I have not tried it on the stovetop.
You will need:
1 6qt Instant Pot
1 Food Processor (or a large hole cheese grater and some elbow grease)
Chef Knife
Paring Knife
Veggie Peeler
Cutting Board
Note: I do all my set up of ingredients before beginning to cook, so I have written in the mise en place as I do it myself.
Ingredients:
1 medium white onion
2 Tablespoons olive oil - I prefer EVOO
3 large squirts of Gourmet Garden Roasted Garlic paste
1 lb beef stew meat
1 large (roughly 1 lb) rutabaga - sub turnips if you can't find rutabaga
2 medium beets (size of my fist) or 3 small ones
2 medium carrots or 1 large
1/4 head green cabbage
1 oz dried baby bella mushrooms (I make these myself with fresh mushrooms then dehydrate - you can sub any dried portobellos, just cut into smaller pieces)
3 Tablespoons apple cider vinegar
1 Cube MASSEL Salt Reduced Beef Style Stock Cubes
1 Cube MASSEL Salt Reduced Vegetable Style Stock Cubes
1/2 teaspoon pepper
5 cups filtered water
Sour Cream & Dill to serve
The process - Mise en Place all ingredients as below.
1 medium white onion
2 tablespoons olive oil - I prefer EVOO
3 large squirts of Gourmet Garden Roasted Garlic paste
1 lb beef stew meat
Mise en place - dice onion, cut beef stew meat into 1/4 inch pieces (cooks better this way). Leave garlic in the tube for now.
1 large (roughly 1 lb) rutabaga - sub turnips if you can't find rutabaga
2 medium beets (size of my fist) or 3 small ones
2 medium carrots or 1 large
1/4 head green cabbage
Mise en place - peel all of the above that require peeling.
Cut rutabaga into 1/2 inch dice. Set aside.
Cut carrots and beets into sizes that will fit into your food processor with a grating blade. Run carrots & beets through the machine together. Set those aside.
Run cabbage through the food processor to grate as if for coleslaw. Set aside.
Turn on the Instant Pot to Saute/Brown. Add in Olive oil, Onion & Garlic Paste. Saute for 2 mins.
Add in diced beef. Saute 3 mins.
Hit cancel/stop button.
Add in Rutabaga, Carrots & Beets. Stir through.
Next add Cabbage, Dried Mushrooms, Apple Cider Vinegar, Stock Cubes (whole - no need to crush) Pepper, and Water. Give it a good stir.
Place and lock lid. Use Meat/Stew Setting for 15 minutes. Follow with a 10 minute natural release, then vent any remaining pressure.
Serve with Sour Cream and Dill. Salt to taste.
